Peanut butter and chocolate – who can resist this combination? Today I have for you an easy and delicious treat for the times you just want a sweet bite (or two). I like these truffles a lot, but I had somehow forgotten about them. A big mistake on my part. I made peanut butter a couple of days ago, so this was a perfect opportunity to also make the truffles.
Both homemade and store-bought peanut butter should work fine in this recipe, so use whatever you have.
Makes about 15
- 1 packet (150g) of biscuits
- 6-7 tablespoons peanut butter
- 1 milk chocolate
- 40g unsalted butter
Grind the biscuits to fine crumbs, put them in a bowl and add the peanut butter. Mix well with a spoon. (Your “dough” should be able to hold together, so you might need a little bit more or a little bit less peanut butter). Roll into balls and put them in the fridge for 15-20 minutes.
Set a double boiler and melt the chocolate and butter until smooth. Dip the peanut butter balls into the chocolate mixture and coat evenly. Place them on parchment paper until the chocolate firms up. Store in the fridge.
