Simple rice pudding

I’m always looking for new recipes to try which is why I tend to forget about some old ones like this rice pudding. I don’t make it often, but when I do I certainly enjoy it. It’s easy and simple and I usually remember it when I want something sweet, but can’t decide what or when I don’t have that many ingredients at hand.

I’m sure many of you like this dessert and you probably have your own way of making it, but here is how I prepare it. This is a very plain version, but it ends up delicious every time.

Makes 4-6 servings

Ingredients:

  • 1 cup white rice
  • 1litre milk
  • 1/2 cup sugar (or to taste)
  • vanilla essence/extract
  • ground cinnamon

Directions:

Wash and drain the rice.

In a large saucepan, bring the milk to a boil. Add the rice and cook  for 10-15 minutes until tender (to be sure just try it), stirring regularly. Mix in the sugar (adjust to your taste) and remove from the heat. Add some vanilla essence/extract.

Let it sit in the pan for 15-20 minutes. It will thicken more. Transfer to cups/bowls and sprinkle ground cinnamon on top. Refrigerate before serving.

    1. I haven’t tried making the pudding with brown rice, but I have seen other recipes using it so it works. Check them out as well, if you prefer brown rice.
