Hey! How was your weekend? Is it starting to feel more like spring where you live? If it is, I’m really jealous of you. My complaints about the weather have no end. It stopped raining but it’s still cold and the wind is not helping at all. Guess I’ll be passing the time with baking while waiting for the sunny days to finally come.
I like having some sort of savory snack around and I’m sure I’m not the only one. I have a few favorite snack recipes, but I’m always looking for something new to try. I had pretty much forgotten about these crackers, but I had some cream cheese and decided to make them again.
This is a quick recipe and you’ll have a batch of crackers in no time. I like to sprinkle mine with sesame seeds but you can use something else. Give them a try sometime.
Ingredients:
- 125g cream cheese
- 80g unsalted butter, room temperature
- 1 egg
- 1/2 teaspoon salt
- 1 1/3 cup all-purpose flour + more if needed
- 1 egg, lightly beaten to brush the top
- sesame seeds to sprinkle on top
Directions:
Preheat the oven to 180C degrees. Line a baking sheet with parchment paper.
In a medium bowl, mix the cream cheese and butter together. Mix in the egg and add the salt and flour. The dough will be crumbly. If you find it sticky, add a little bit more flour. Form it into a ball then flatten it.
Transfer to a lightly floured surface and roll into a 3-4mm thick layer. Cut out the shapes you want and transfer the crackers to the baking sheet. Brush the tops with the beaten egg then sprinkle with sesame seeds.
Bake for about 15 minutes or until golden.
