Lemon granita

May is here! Can you believe that the fifth month of the year has started? I certainly can’t. I feel like time is passing way too fast. After a relatively cold week, I was hoping that the new one will be much warmer. That’s why I made this lemon granita. Today was pretty windy, but the next few days should finally get warm.

Have you made granita before? I actually discovered it just last month but I already made it three times. I tried it with lemons and strawberries. Surprisingly, I liked the lemon granita more. It’s so flavorful! I didn’t expect much the first time I made it, but it quickly became a favorite. It’s very refreshing and easy to prepare. The perfect treat for the upcoming summer.

Ingredients:

  • 1 cup water
  • 3/4 – 1 cup sugar (to taste)
  • 1 cup lemon juice
  • grated zest of 2 lemons

Directions:

Combine sugar and water in a saucepan. Bring to a boil and let it simmer for a minute or two until the sugar has dissolved. Remove from the heat and let it cool to room temperature.

Mix the lemon juice, sugar syrup and zest in a suitable container. Place in the freezer. When it starts freezing around the edges, use a fork to scrape it. Do that several times every 30-40 minutes (this way it’s not going to freeze in a solid block). Once completely frozen it’s ready to serve (you can fluff it again with a fork just before serving).
