Hi! How is June going for you so far? It’s super hot here and of course, I needed something refreshing. Since it’s ice cream and popsicle season I opted to make some peach popsicles. I still haven’t bought molds and as you can see I used cups to make them. They are not that pretty this way, but they sure are tasty.
I had two peaches left and some heavy cream I needed to use up. Mix with some greek yogurt and you have these yummy popsicles :).
Ingredients:
- 1/2 cup heavy cream
- 1/2 cup greek yogurt
- 2 tablespoons honey (or to taste)
- 1 tablespoon lemon juice
- vanilla essence/extract
- 2 peaches, peeled and chopped
Directions:
Stir together the heavy cream, greek yogurt, honey, lemon juice and vanilla. Add the chopped peaches and puree until smooth. Divide between molds/plastic cups and freeze for several hours.
In case you are using cups like me, you can cover them with a piece of aluminum foil. Make a small cut in it and insert the stick. This will hold it up straight.

Oh, to me peaches just represent summer and this recipe is just summer on a stick!
