I didn’t do much baking this past week. Sometimes I just can’t decide what I want to make (or eat). Finally, I made these cookies since I really wanted something sweet. I couldn’t come up with a better name than “simple sandwich cookies” because that’s just what they are – quite plain but still tasty, at least for me. I had a small jar of marmalade from our neighbor which worked perfectly here.
This recipe is from an old cookbook I have at home, well more like just copied pages of a cookbook with many of them missing. Surprisingly, it works very well. I’ve made them before with orange marmalade and dipped in milk chocolate. I liked them a lot. Any sort of marmalade is fine. You can just dust them with powdered sugar or dip them in chocolate, whatever you prefer.
Ingredients:
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1/2 cup sunflower oil
- vanilla essence/extract
- 1 cup powdered sugar
- 3 3/4 cups all-purpose flour+more if needed
- 1 teaspoon baking soda
- marmalade of your choice
Directions:
Preheat the oven to 180C degrees. Line a baking sheet with parchment paper.
In a large bowl, whisk together the eggs, milk and oil. Add the vanilla. Sift the sugar and mix it in. Sift the flour and add it (together with the baking soda) in batches. Mix until fully incorporated. Start kneading it. The dough should be soft, but not sticky. Add more flour if needed.
Divide the dough into two parts. Roll it into 3-4mm thick layer on a lightly floured surface. Cut out the cookies and arrange them on the baking sheet.
Bake them for about 12-15 minutes or until just golden around the edges. Let the cookies cool completely. Once cooled, sandwich them with the marmalade. You can dust them with powdered sugar or dip them in melted chocolate if you want to.
