Apple and walnut cake

And the autumn is already here. Summer always flies by so fast. I guess there are still some sunny days left, but they will be gone all too soon and that makes me really sad.

So to make myself feel a little bit better, I prepared this cake. It’s simple, very autumn appropriate and just delicious. It’s from the old notebook with recipes I have at home. I have tried different recipes with apples, but this is still one of my favorite. It always ends up so good.

This cake is not too sweet and the apples, walnuts, and cinnamon blend really well together to create a perfect autumn taste. I’m sure you will like it.

Ingredients:

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup sunflower oil
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 package (10g) baking powder
  • 2 cups grated apples
  • 1 cup ground walnuts
  • powdered sugar for sprinkling

Directions:

Preheat the oven to 200C degrees.

Prepare your pan. Grease it with oil then sprinkle some flour.

With an electric mixer, beat together the eggs and sugar until light and fluffy. Add the oil and then the dry ingredients. Lastly, add the apples and walnuts and mix well.

Pour into the pan and bake for about 40 minutes (to be sure, insert a skewer and if it comes out clean, it’s ready. Since all ovens are different, the time might slightly vary).

Turn the cake on a platter and sprinkle with some powdered sugar. Let it cool slightly before slicing.

Notes:

Instead of ground walnuts, you can use chopped ones if you prefer.
