We’re closing it on Christmas. I can’t believe it’s next week! How is your preparation going? I haven’t even started yet. I’m more of a last minute type of person which can probably explain why I still don’t have any Christmas recipes here on the blog. There are a couple of days left so maybe you’ll see something. Until then enjoy this little yogurt dessert I made.
It turned out really good. It’s simple, quick and delicious. If you’re tired of all the baking, you can try this for a change. Use your favorite biscuits, the fruit you have at hand or even some jam. Customize it to fit your taste.
Makes 4 servings
Ingredients:
- 100g biscuits of your choice
- 350g greek yogurt
- 2 tablespoons lemon juice
- zest of 1 lemon
- vanilla essence/extract
- 2 tablespoons caster (or powdered) sugar or to taste
- 1 grapefruit
- 1 banana
- 1 kiwi + 1 more for decoration (optional)
Directions:
Grind the biscuits to fine crumbs.
Mix the greek yogurt with the lemon juice, zest, vanilla, and sugar.
Peel and chop the grapefruit, banana, and kiwi into small pieces (you need to remove the pith and membrane of the grapefruit because it’s bitter. To see how to do that, check out this picture tutorial at The Yummy Life).
To layer the dessert, start with biscuit crumbs, then add some yogurt, then a mix of the fruit, little bit of yogurt to cover the fruit and again biscuit crumbs.
I decorated the dessert with a kiwi slice, cut into a star shape (used a small cookie cutter). You can decorate it however you like.
