I’ve been wondering what to bake next for the last two days and I finally decided on this chocolate chunk banana bread. I’m very happy with how it turned out so I’m sharing it with you too. Bananas have always been a favorite of mine. I have used them in baked goods only a few times, however. This bread here is my biggest success so far.

The bread is moist and not very sweet which I like. I think with the chocolate it has just the right sweetness to it (at least for me). It also comes together easily. You don’t need a mixer, just a wooden spoon.

I baked it in a round pan and sprinkled the chocolate chunks on top so it wouldn’t look too plain :). Adding chocolate instantly makes everything better :).

Ingredients:

  • 2 eggs, lightly beaten
  • 1/2 cup honey
  • 1/2 cup greek yogurt
  • vanilla essence/extract
  • 2 bananas, mashed
  • 1/2 cup sunflower oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • pinch of salt
  • 100g dark chocolate chopped (or chocolate chips)

Directions:

Preheat the oven to 180C degrees. Line a baking pan (around 22cm) with parchment paper.

In a bowl, mix together the eggs and honey with a wooden spoon. Mix in the yogurt, vanilla and then the bananas. Add the oil (give a good stir here so it will be well incorporated ).

Sift the flour and add it together with the baking soda and salt in three batches, stirring each time just to combine. The batter will have a few lumps but that’s fine. Pour into the prepared pan and sprinkle the chocolate chunks on top.

Bake for about 35-40 minutes or until a skewer inserted in the center comes out clean. Let the bread cool before slicing.
